Bird's Eye Recipe: Warm Parmesan Spinach Dip

Have you stocked up this week on frozen spinach thanks to the 50% off Bird's Eye frozen veggies deal? Wondering what to do with all of it? I bought 6 boxes since it was a money-maker, but I don't eat it unless it's "in" something. Someone posted the link for this recipe on slickdeals and I thought I'd try it. It was so good! I ate it with the garlic Bagel Crisps that were BOGO a while ago. 


Warm Parmesan Spinach Dip
Ingredients

  • 1 box (10 oz) Birds Eye® Chopped Spinach, thawed and squeezed dry
  • 1 cup Hellmann’s® or Best Foods® Real Mayonnaise
  • ½ cup sour cream
  • 2 cloves fresh garlic, minced
  • ¾ cup shredded Parmesan cheese
  • 1 tomato, diced
  • 1 green onion, sliced

Cooking Instructions

  1. Preheat oven to 350°F.
  2. Stir spinach, mayonnaise, sour cream, garlic and ½ cup Parmesan cheese together in a large bowl. Season with freshly ground black pepper.
  3. Pour into an oven-safe baking dish coated with cooking spray.
  4. Bake in oven for 20 minutes. Sprinkle with remaining ¼ cup Parmesan cheese. Return to oven and bake until cheese melts, about 2 to 3 minutes.
  5. Sprinkle with tomato and green onion before serving. Serve with cubed French or Italian bread.
